Granola Bars



Recipe: (adapted from Bon Appetit)
2 cups old fashioned oats
3/4 cup sliced almonds
1/4 cup coconut oil (plus more)
3/4 cup chopped dried cranberry
3/4 cup unsweetened shredded coconut
1/2 cup unsalted, shelled sunflower seeds
2 tbsp toasted flax seeds
1/2 cup honey
1/2 cup light brown sugar
1tsp salt
1/2 cup white or dark chocolate chips (optional)

-Pre heat oven to 400º.  
-Run the oats quickly through a food processor, this will make it easier for the kids to chew. (optional)
-Mix oats and almonds on a baking sheet and bake for 10 minutes, stirring once. Let cool on sheet.
-Reduce temperature to 325º
-Brush a 13x9 metal or glass baking dish w/ coconut oil and line with parchment paper; brush paper with oil.
-Brush a large bowl w/ coconut oil and mix together oat mixture, cranberries, flaxseeds, coconut, and sunflower seeds. Set aside.
-Bring 1/4 cup coconut oil, honey, sugar and salt to a boil, stir until sugar dissolves. Let it boil for 1 minute then pour over oat mixture.
-Stir until everything is evenly coated.
-Transfer granola onto prepared baking dish and lightly press evenly.
-Bake for 10 minutes. Turn pan and continue baking for another 15 minutes until the edges are darker.
-Let the granola completely cool in the baking dish then lift the parchment paper with granola and cut into bars. 
-Melt chocolate chips in a double boiler and dip granola bars! yum.

HAPPY NEW YEAR!


Happy new year, everyone!
Let's drink to 2012 for all it's ups and downs and ring in the bright new year with some of my favorite cocktails.

Mint Mojito



Recipe:
6 ounces light rum
10 mint leaves
4 lime wedges
1 tbsp sugar
2 ounces club soda
muddler

-In a shaker or strong glass, muddle the mint leaves w/ sugar and limes 
(do not strain)
-Add light rum and ice cubes
-Top it off w/ club soda



White Sangria



Recipe:
2 bottles white wine (Riesling)
1/2 liter ginger ale
3 oranges (juiced & sliced)
2 lemons (juiced & sliced)
1 lime (juiced)
4 green apples (sliced)
2 oz brandy

-Mix everything together and chill for 6-12 hours.
-Serve with ice.


Champagne & Ice Pops



Recipe:

Champagne
4 oranges (juiced)
3 oz. paper cups or ice pop molds
wooden spoons or popsicle sticks

-Distribute the juice in paper cups and freeze w/ spoon or sticks.
-Once frozen place the popsicle in the glass and pour champagne over it.

Dark & Stormy



Recipe:
2 oz. black rum
5 oz. ginger beer
lime wedges

-Mix all ingredients together.



Michelada



Recipe:

2 oz. tomato juice
4 drops tabasco
2 dashes worcestershire sauce
1 lime (juiced)
1 pinch of red pepper flakes
1 bottle Mexican beer
ice cubes

-Mix first five ingredients then add beer and ice.
